Oat bars
Ingredients:
- 1 cup butter, room temp (227g)
- 1 cup packed light brown sugar (220g)
- ½ cup granulated sugar (100g)
- 2 large eggs
- 2 tsp vanilla extract
- ½ tsp salt
- 1 tsp baking soda
- 1 tsp baking powder
- 1½ cups all-purpose flour (188g)
- 2 cups rolled oats (not quick oats) (170g)
- 2 cups chocolate chips (milk, semi-sweet, or both!) (340g)
The Process:
- Preheat oven to 350°F. Grease or line a 9x13 pan.
- In a large bowl, beat butter + sugars until smooth and creamy.
- Mix in eggs one at a time, then vanilla. In another bowl, whisk flour, oats, salt, baking soda + baking powder. Add dry to wet and stir until combined. Fold in the chocolate chips.
- Press dough evenly into the pan.
- Bake for 25–30 minutes, until golden on top. Let cool before slicing into bars!
