Peanut Butter Cup Bars

Ingredients:


Base:

100g oats
100g flaked almonds or ground almonds
Pinch of salt
5 tbsp smooth or crunchy peanut butter
3 tbsp maple syrup or honey
1 tbsp milk (add a little more if the mixture seems dry)
1 tsp vanilla extract

Topping:

150g milk or dark chocolate, chopped
2 tsp smooth peanut butter
Flaky sea salt, to sprinkle

The Process:


Prepare the Base:
In a food processor, blitz the oats and almonds until finely ground. Transfer to a large bowl and add the rest of the base ingredients. Mix well and press evenly into the prepared tin.

Create the Topping:
Melt the chocolate in the microwave in 10-second bursts until smooth. Stir in the peanut butter, then pour over the base. Gently tap the tin to remove any air bubbles.

Set:
Refrigerate for 1-2 hours until firm.

Serve:
Slice into bars and enjoy. Store in the fridge in a sealed container for 1-2 weeks.
